Located in one of the most emblematic places in Valencia, the former Hotel Astoria Palace (Plaza Rodrigo Botet no. 5) to be precise, the new Only YOU Hotels establishment is one of the most distinguished openings in 2022.
Conceived as a boutique hotel designed to be enjoyed by everyone, from guests to locals, this five-star hotel has two Restaurants, a cocktail bar, Tom Black tailoring, and a florist (El Atelier de la Flor) and features the careful design of interior designer Lázaro Rosa-Violán in collaboration with PORCELANOSA Group collections.
Eclectic interior design between Valencia and New York
To transpose the calm, Mediterranean lifestyle found in the Valencian capital, the designer has used vinyl flooring with a natural finish, Linkfloor Mountain Natural by L’Antic Colonial, on the entry staircase, reception, gym, meeting rooms and common areas.
With warm, orange lighting that extends from the main façade to the rooms, this hotel with a "sorollesque" atmosphere (as Rosa-Violan says himself) seeks to make the customer feel at home with simple, well-defined lines, touches of vegetation, linen and cotton textiles and natural wood. "This a five-star hotel, meaning everything has been created in line with the highest quality standards. Everything breathes cosmopolitan and eclectic luxury, from the earth tone colour range to the robust trims and timeless furniture," emphasises Lázaro Rosa-Violán.
The cosmopolitan, Valencian culture can be found on all floors, which open to the outside in search of natural light. This can be seen once you walk through the entrance, where spherical lamps and velvety red armchairs transport guests to the New York jazz clubs of the 1950s. There, a long, curved marble bar welcomes customers into the reception-turned-speakeasy where they can enjoy the signature cocktails of Ivan Talens or the classic esmorçaret (lunch) with new culinary concepts.
Bright rooms in honour of the Mediterranean
In the main rooms (Homie Suites), equipped with a living room, kitchen and balcony, Rosa-Violán has opted for a minimalist interior design with white, blue, red and beige as predominant shades. This choice of colours subtly recreates the seaside landscapes of the region. In search of this aesthetic, the designer opted for AC5 Cross Luxor Cream laminate flooring by L'Antic Colonial, whose wood-inspired texture beautifies spaces and improves safety thanks to its superior strength against humidity and temperature changes.
The bathrooms found in each room feature a minimalist aesthetic in whitish tones and colours. All have built-in showers (with Butech systems), circular wash basins in natural Karon Circle Grey Stone by L'Antic Colonial and Lignage taps, an exclusive collection by architect Ramón Esteve for Noken. Curved and straight shapes come together in the bathroom fittings and also in the bathtubs, with the Arquitect model by Noken and the Round mounted taps (Noken) in chrome finish.
Valencian cuisine merges with Asian cuisine
Gastronomy also takes centre stage at Only YOU Hotel Valencia, with two restaurants where seafood combines harmoniously with Japanese cuisine. This is the case of the El Mirador, located on the ninth floor of the hotel, where guests can enjoy rice specialities alongside one of the best panoramic views of the city.
In this space, chef José María Climente fuses tradition and avant-garde with fresh, locally sourced products. Featured dishes include the tuna belly in olive oil with Perelló tomato and chili pepper foam; grilled octopus with sobrasada foam; eel mille-feuille in "all i pebre" with chili pepper caviar; and reinterpreted classic rice dishes. Among them, paella with duck and seasonal artichokes; rice with duck and figs "en llanda"; "senyoret" seafood rice; or fideuá made with fine pasta, prawn and parsley aioli "en llanda".
These delicious dishes distil the essence of the Mediterranean and are enjoyed in a dining room filled with olive trees, warm lights and references to Valencian modernism (the blue floor with hydraulic tiles, an exclusive design with Craft ceramic pieces by L’Antic Colonial). In addition to the menu, the restaurant also offers a select brunch every Sunday with French pastries, seasonal fruit, cheeses from the Valencian Community and Iberian sausages.
On the ground floor next to the lobby, Venezuelan chef Fermín Azkue brings his very own fusion cuisine to Salvaje, with dishes that blend Japanese techniques with Valencian ingredients. An innovative menu that has already found success in cities such as Miami, Madrid and Barcelona.
